Isa's Pistachio Cake at Miss Cordelia's is a local product and a best bet for a bite of cake.
Last week we had lunch at Miss Cordelia's in Harbor Town and chef David Thorton whipped up a non-traditional strawberry shortcake for us. He spread a little lemon curd on some cake, topped it with a few strawberries and whipped cream -- and what could be simpler?
At the first bite, though, I knew I was eating something special. The cake was Isa's Pistachio Cake, which is served by the slice in the restaurant and sold by the loaf in the store. I took a loaf home with me and promptly forgot about it. Four days later I opened the container and found the cake as moist, tender and delicate as the fresh cake was in the restaurant.
I'm not sure how Isaura Amill makes her cake, but I'm pretty sure she doesn't skimp on the butter. Don't be fooled, seeing the loaf, into thinking it's like a pound cake -- it's much lighter. Don't Google "pistachio cake" and think the 7-Up, pistachio pudding recipe you'll find is anywhere close to this. Do what I plan to do instead -- just fork over the $4.99 for the loaf and enjoy every bite. This is a fine cake.
