Well, this might not seem like pimiento cheese weather, but don’t forget that you can grill it and serve it with a bowl of steaming hot soup. In any event, Newk’s spicier, kicked-up PC is one that you’re going to want to add to the rotation of the good store-bought versions around town.

My daughter and my mother often eat at Newk’s in Oxford, and I always get a care package of pimiento cheese delivered back to me. I knew there were Newk’s in town, but last time we were in Oxford we asked where they were and we were told there weren’t any; I figured they must’ve closed.

Uh, nope. And it’s true that there aren’t any Newk’s in Memphis — but there’s one in Collierville, one in Southaven and one in Cordova.

You can get your pimiento cheese — made with sharp yellow and white cheddar cheeses and liberally dosed with black pepper — on a sandwich or buy it by the tub.

The pimiento cheese is $9.29 per pound and available locally at Newk’s locations in Cordova (2200 N. Germantown Pkwy.; 377-8796), in Collierville (3860 Houston Levee; 861-1221) and Southaven (63075 Goodman; 662-536-4919).
