Who or what was your first cooking influence? I've always been a sweet tooth fanatic. My dad used to wake me up in the middle of the night and we'd go eat frozen Snickers bars. We never ate actual food. We ate sweets all the time. ...
What was the first thing you ever cooked or baked? Me and my dad were real big on toast with Nestle's Quik on it. You put butter on top and then you put the powder on when it's still hot and the powder melts. It's so fantastic.
What was your first food-related job? Cold Stone Creamery.
What was something important that a fellow chef taught you? You can't doubt yourself with this stuff. ... You have to go in and know that you can do it and know that whatever you make is gonna be fantastic. It's OK. You don't have to have been to CIA (Culinary Institute of America). You can do it.
What is the Brandi Marter style? I like extreme flavors, huge combinations. Mile-high cakes and cupcakes that have a thousand things in them.
Describe a dish you created. Crack Cake. It's just nasty addictive. It's really just a bread pudding, but it's a bread pudding made from chocolate cake that I glaze. ... I take the cake and break it up and put (in) straight custard mix, but I fill up that custard mix with toffee and pecans. Bake it. And you cover it up with homemade caramel and more pecans.
What do you cook or bake at home, if anything? Tuna, apple. That's it. Protein shakes.
What's your favorite food? Everything brunch. I've been to every single restaurant twice in Memphis that serves brunch. ... All the brunch sweets. ... When you go to The Brushmark they have a pastry basket. I could just eat the pastry basket. The large one, not the small one. The big one. With a huge cup of coffee.
What's your least favorite food? Raw oysters. I'm scared of them. I ate one and got sick and so now they terrify me.
