When I eat the French Fries Trio at Fuel Café in Midtown, I want to do cartwheels down Madison Avenue. Come on, bike lane!
Fuel isn’t a typical café — everything is wild-caught, sustainably grown, organic, grass-fed, farm to fork, and everything else that you’re supposed to be to be a good steward of our planet. And these fries, at $9, aren’t your typical french fries. These are, without a doubt, the best fries I’ve tasted anywhere. They might be the best fries in the world, but I’m not quite ready to go that far.
The fries are cut by hand and soaked in a water bath for about three hours. After their bath, they’re half fried. When you order, they’re fried again and sprinkled with sea salt. Each fry is perfectly cooked, not too mushy, but never too done, and golden brown.
But wait. It gets better. The fries come with a trio of dipping sauces. The first is a sweet chili ketchup, which has a little bit of a kick mixed in with the sweetness. You also get a white truffle and parmesan sauce. The last is a rouille, which is mayonnaise based and has a smoked paprika flavor.
The experience I’ve had with the sauces (and my waiter said the same thing) is that you’re drawn to a particular sauce, but it’s another one that keeps you coming back. I couldn’t wait to try a fry with the white truffle and parmesan sauce, and although I love it, the sweet chili ketchup is what’s got me hooked.
The only thing I would change about Fuel is that they don’t serve “real” soda. They serve natural drinks, and this girl has gotta have her Coke!
