I passed Fox Ridge Pizza dozens of times when it was at Ridgeway and Knight Arnold, but I never went in, for some reason.
I recently visited its current location in Cordova to check out the "Fox Ridge Special," one of their best-selling pizzas. I like the restaurant's logo of a shifty-eyed fox carrying a pizza.
The Fox Ridge Special is made of sausage, pepperoni, Canadian bacon, pork barbecue, onions, bell pepper and mushrooms, said cook Michael Allen. Jacob Benetz, who also works at the restaurant, likes the way the bell pepper slices burst while the pizza is cooking. The juice mixes with the rest of the ingredients. "The bell pepper intensifies the taste," he said.
The pizza was delicious. What really struck me was the crisp crust. I usually leave most of the pizza crust because too often it's hard and/or rubbery.
I watched Will Strickland, a cook, prepare his favorite: the barbecued chicken pizza with honey barbecue sauce.
Eric and Waverly Goelitz, who were sharing a pepperoni and sausage pizza, drive from Marion, Ark., to Memphis because they like Fox Ridge Pizza so much. They're also a fan of the hamburgers, which Eric said aren't like "anything in Memphis."
I saw Allen preparing some of the burgers in the kitchen. The top of the bottom bun is covered with pickles. The saucer-size patty goes on top. You can get whatever you want on it.
I can't wait to try one of those too.
