Who or what was your first cooking influence? My mom. (She cooked) a little bit of everything, from soul food to Italian; a little bit of everything on the plate.
What was the first thing you ever cooked or baked? It was probably nachos. That was probably the only thing they let me cook back then when I was 10 years old.
When did you decide to become a chef? I always liked cooking. It's always been a passion of mine. Whether making appetizers, entrees or doing some work in pastries, I enjoyed it and it was something I wanted to do. Anthony Bourdain, he was probably my favorite chef. I went and saw him at the Orpheum recently.
What is something important a fellow chef taught you? (To) Put my heart into everything.
Your sign says the kitchen is open until 4:30. Who eats at 4:30 a.m.? Restaurant employees Downtown (and) on Beale Street. They all come in when they get off work and have a bite to eat and couple of drinks and just relax.
What do you cook at home, if anything? Everything from soul food to Italian to French. Whatever my family is in the mood for.
What is your favorite food? Sushi.
What is your least favorite food? Cabbage.
